Mushroom coffee is a coffee drink made by brewing a blend of ground mushroom and ground coffee beans. Once you have the blend, you can use it to make any type of coffee, whether it is pour-over, Turkish coffee, drip coffee, French press, or espresso. Mushroom coffee can be brewed using either one of four coffee brewing methods used in making different coffees all over the world. You can find the details of these methods in our related blog by clicking on this link. This recipe will use the drip brewing (filtering) method and make pour-over coffee with mushroom coffee.

Not the culinary mushrooms we see in grocery stores, but medicinal mushrooms are used to blend mushroom coffee. There are five medicinal mushrooms used for this purpose: lion's mane mushroom, turkey tail mushroom, reishi mushroom, chaga mushroom, and cordyceps mushroom. To make a mushroom coffee blend, dried mushrooms are ground and mixed with ground coffee beans. Then, the blend is used to make any type of coffee as regular ground coffee.

As we all know, grind size is important to have a perfect coffee experience. That is also the case while making mushroom coffee. We said any type of coffee can be made with mushroom coffee, so you should make sure that the grind size of the mushroom coffee blend you buy is appropriate for the coffee type you are planning to make. Otherwise, the result could be a disaster.

Ingredients

  • 3 cups water, filtered or bottled if tap water is low quality

  • 6 tablespoons (45 grams) mushroom coffee, medium coarse

  • Some warm milk and honey for sweetening (optional)

  • A gooseneck kettle

  • Pour-over coffee maker or pour-over coffee brewer

  • Coffee filter (stainless steel if possible, since paper filters retain the oil in coffee beans)

Directions

  1. Add the water into a kettle and boil it. We will let it rest for five minutes after it boils to make it cool down to the ideal pour-over coffee temperature of 200 degrees Fahrenheit. If you have a pour-over kettle with an adjustable temperature setting, then heat the water to the desired temperature instead of boiling.

  2. Prepare your coffee maker or brewer by putting a filter into it and placing it over a coffee cup.

  3. If you use a paper filter, pour some hot water to wet the filter. That will minimize the passing of filter’s taste to coffee, and will warm the coffee cup.

  4. Pour the water you use to wet the filter.

  5. When the water temperature reaches the desired degree, add ground mushroom coffee to the filter and pour ⅛ of the water over it, ensuring all get wet.

  6. Wait for 30-45 seconds for the blooming phase, which you can observe as bubbles come out while gasses trapped in the coffee beans during roasting are released.

  7. Pour the rest of the water slowly, ensuring there is no coffee not in touch with the water. You can pour some water, wait 30 seconds, and pour some more in series to finish the brewing in 2-3 minutes. Pouring water in series is better for a more flavourful result than pouring all the water at once.

  8. When it stops dripping, your mushroom coffee is ready.

  • RECIPE NOTES FOR MUSHROOM COFFEE:

    You can change the amount of coffee in the recipe depending on your palate taste. The most recommended water-to-coffee ratio, golden ratio, for pour-over coffee is 16:1, and this ratio is used in this recipe, but you can increase or decrease it for a perfect taste.

    Please keep in mind that water quality is very important to have a pure coffee taste. So, if your tap water is low quality and contains chemicals and thus odors, use filtered water or bottled spring water. Distilled water is too plain to make coffee, but even it would be better than a low-quality tap water.

    HOW TO SERVE MUSHROOM COFFEE:

    You can serve mushroom coffee in a cup suitable to the coffee type you make with it. For example, since we make pour-over coffee in this recipe, you can serve it in a regular coffee cup.

    A coffee cake will go great with mushroom coffee, as it does so along with regular coffee.

    You can add some honey or sugar into your cup if you prepare your coffee sweetened.
