Lemon Poppy Seed Cake Bread Machine Recipe

Lemon poppy seed cake is a moist, tender, refreshing cake full of lemon flavor and the crunches of poppy seeds. Either as a dessert or for breakfast, each way it is delicious. If you would like to enrich the flavor, it is also possible to spread some cream cheese over and in it, or top it with lemon glaze.

Ingredients

  • 3 cups all purpose flour

  • 1½ teaspoons salt

  • 1½ teaspoons baking powder

  • 3 tablespoons poppy seeds

  • 2 teaspoons lemon juice

  • 2 teaspoons lemon zest

  • 1 cup vegetable oil

  • 3 eggs

  • 1½ cups milk

  • 2 cups sugar

  • 1½ teaspoons vanilla extract

Directions

  1. Open the lid of the bread maker and remove the pan from the machine by pulling it upward.

  2. Make sure the pan is clean and both kneading paddles are in place.

  3. Add all ingredients into the bread pan in the order listed and gently mix them a little bit using a small rubber spatula to help them blend well in the machine. You do not need to mix too much, the bread machine will do the real work!

  4. Put the bread pan back in the bread machine pressing it down so that it clicks into its place, and close the lid.

  5. Plug the bread machine into an outlet and press the “Power” button to turn the machine on.

  6. Use the “Program” button to select the program #8 for the cake cycle.

  7. Press the “Color” button to choose your desired crust color.

  8. Press the arrow to set the timer to 1 hour and 20 minutes.

  9. Press the “Start” button to start the cake making cycle.

  10. The machine will let you know by making a beep sound once the cake making cycle is finished. Open the lid at this time and remove the bread pan out by using a pot holder.

  11. If you do not remove the lemon poppy seed cake immediately, the bread machine will automatically go into a warming cycle to keep the cake warm for one hour.

  12. After taking the bread pan out of the machine, flip the pan over and gently tap it to remove the lemon poppy seed cake. Make sure the kneading paddles are taken out of the cake.

  13. Slice and enjoy your lemon poppy seed cake!
