Pumpkin is the symbol of autumn and seen in almost all fall layouts. It has deserved this status not only because it is harvested from the end of August till the end of October thus consumed almost all autumn long, but also because its colors from yellowish pale green to orange perfectly resemble the leaves on the trees in fall. Pumpkin perfectly matches the autumn landscapes with these features.

Pumpkin is a low-carb and high-fiber fruit that helps regulate blood sugar level. Pumpkin cake is one of the several recipes that make you enjoy eating this healthy fruit. Even though this recipe is called pumpkin bread in some websites and cookbooks, we call it pumpkin cake since it is sweet and made with baking powder and baking soda instead of a yeast. However, both names refer to the same food in the end.

Pumpkin cake has a smooth mild pumpkin flavor which goes very well with black tea and coffee. It is also perfect for breakfast and can be eaten toasting, slathering it with butter or cream cheese, or drizzling some honey or jam over it.
