Absolutely, you can use dry lentils instead of canned lentils. You just need to cook them before using in this recipe. To do so, put 1 cup dry lentil into a pot, add 3 cups of water over it, bring it to a boil, close the lid and simmer them until tender. It will take 15-20 minutes for the lentils to get tender. 1 cup dry lentil should yield almost 30 ounces of cooked tender lentils.

In fact, dry lentils are healthier than canned lentils because of the high sodium levels in canned lentils. So, it is better to prefer dry lentils. However, if you do not have enough time, you can also use canned lentils after ensuring to rinse them very well to get rid of some sodium.

Lentil Quinoa Meatloaf Air Fryer Recipe

Could it be possible to make meatloaf without meat? Of course it is possible even though it is not correct to call it meatloaf. The delicious lentil quinoa meatloaf recipe below is a vegan meatloaf made with lentil, quinoa and cashew nuts. Carrot chopped in small pieces can also be added to it depending on preference.

Now let’s move on to the recipe below and serve lentil quinoa loaf with some green salad tonight!

Ingredients

  • Olive oil spray

  • 2 cups cooked quinoa

  • 2 cup raw cashew nuts, chopped

  • 2 15-ounce cans brown lentils, drained and rinsed

  • 1 medium white onion, finely chopped

  • 2 garlic cloves, minced

  • 1 cup ketchup

  • 3 tablespoons soy sauce

  • 3 tablespoons flax meal

Directions

  1. Preheat the air fryer by selecting the “Vegetables” function and adjusting the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Grease an 8-inch loaf pan with olive oil spray and set it aside.

  3. Add quinoa, cashew nuts, lentils, onion, garlic, ketchup, soy sauce, and flax meal into a bowl and mix them very well.

  4. Pour the mixture into the greased loaf pan and press it to fit the pan using a spoon.

  5. Open the air fryer and place the loaf pan into it.

  6. Set the timer to 10 minutes and press the “Start/Pause” button to begin baking.

  7. Bake the loaf until it is golden brown and compacted.

  8. Open the air fryer, remove the loaf pan onto a heatproof surface and let the loaf cool down in the pan for 10 minutes.

  9. After 10 minutes, run a butter knife along the edges of the loaf meatloaf and flip the loaf pan over onto a serving platter.

  10. Your lentil quinoa meatloaf without meat is ready!

  11. Slice it and enjoy!
