A burrito is a delicious dish from Mexican cuisine. It is a tortilla wrapped around various ingredients. Burritos can be eaten in all three main meals of the day depending on the ingredients used to make it. You can find burritos in restaurants but making them at home is also very easy as it is in this breakfast burrito recipe.

This breakfast burrito recipe is made with sausages, eggs, and pepper jack cheese. It is very healthy and provides almost all nutrients recommended to take in daily at breakfast. It is also very filling so you will probably not need to prepare a lunch on the days when you have this breakfast burrito at breakfast. It will also be a lovely surprise for your loved ones on a weekend morning to relieve everyone who is tired of work and school days.

Now let’s move on to the recipe and prepare our burritos for breakfast!

Ingredients

  • Olive oil spray

  • 1 pound breakfast sausages

  • 16 eggs

  • Salt and black pepper to taste

  • 1 medium red bell pepper, chopped

  • 2 cups shredded pepper jack cheese

  • 8 (6-inch) flour tortillas

Directions

  1. Preheat the air fryer by setting the temperature to 350°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Grease a 6-inch round baking dish with olive oil spray and add the sausages into it.

  3. Open the air fryer, place the baking dish with the sausages over a dehydration rack, and close it.

  4. Set the timer to 8 minutes and press the “Start/Pause” button to start cooking.

  5. Cook the sausages until golden brown.

  6. Open the air fryer, remove the baking dish, and set it aside.

  7. Crack the eggs into a bowl, season it with salt and black pepper, and whisk them until smooth.

  8. Add the sausages and bell pepper into the whisked eggs and mix them.

  9. Pour the mixture into the same baking dish you put sausages in at the beginning.

  10. Place the baking dish over a dehydration rack, and close the air fryer.

  11. Set the timer to 10 minutes and press the “Start/Pause” button to begin cooking.

  12. Halfway through cooking, sprinkle half of pepper jack cheese on the mixture and mix it.

  13. Continue cooking until the eggs are set and the cheese melts.

  14. Open the air fryer and remove the baking dish.

  15. Lay the tortillas on a clean flat surface, divide the egg mixture onto them by placing the mixture lengthwise considering the tortillas will be wrapped in cylindrical shape, and put the remaining pepper jack cheese on top.

  16. Wrap tortillas over filling forming a cylindrical shape. You may consider sealing the bottom by folding the tortilla over the filling to prevent it from falling while eating.

  17. Arrange burritos on a dehydration rack, and put them in the air fryer.

  18. Set the timer to 3 minutes and press the “Start/Pause” button to begin toasting burritos.

  19. Open the air fryer and transfer the burritos onto a serving platter.

  20. Serve warm.
