Twice baked potatoes are already baked potatoes scooped out and filled back in with the mixture made by adding some additional ingredients, and baked again. It is called twice baked since it is really baked twice.

Twice baked potato is a popular side dish of fancy dinners. The fact that making this popular side dish is so easy is such a great thing. It goes very well with steak and chicken dishes such as pork chops, whole chicken and chicken thighs. It can also be eaten as a light meal alone.

For the recipe below you should prefer big potatoes with thicker skin. Thin skinned potatoes can also be used to make this recipe but it might be a little bit difficult to deal with them. You can also use pre-baked potatoes to cut the cooking time.

Ingredients

  • 3 bacon slices, cooked

  • 4 large potatoes

  • 1 teaspoon olive oil

  • Salt and black pepper to taste

  • 4 tablespoons sour cream

  • 1 tablespoon butter

  • ½ cup grated cheddar cheese, divided

  • 1 tablespoon chopped fresh chives for garnish

Directions

  1. Preheat the air fryer by selecting the “Bacon” function and adjust the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Open the air fryer, lay bacon in the basket, and close the air fryer.

  3. Set the timer to 8 minutes and press the “Start/Pause” button to start frying.

  4. Fry the bacon until golden brown and crispy.

  5. Once ready, open the air fryer and use tongs to remove the bacon onto a paper towel-lined plate to drain grease.

  6. Chop the bacon into small bits and set aside.

  7. Make holes all around the potatoes using a fork, drizzle them with olive oil and season with salt and black pepper.

  8. Rub the seasoning on potatoes by hand.

  9. Place the potatoes in the air fryer basket and close the air fryer.

  10. Adjust the temperature to 400°F and the timer to 30 minutes. Once you press the “Start/Pause” button, it will initiate baking.

  11. Bake the potatoes until tender, turning halfway through cooking.

  12. When potatoes are cooked, open the air fryer and transfer them onto a chopping board.

  13. Let them cool down for 10 minutes.

  14. Cut each potato lengthwise in half and scoop out the inside into a bowl without destroying the skin, and set the skins aside.

  15. Add sour cream, butter, half of cheddar cheese, salt, and black pepper to the potato insides, mash and mix them until smooth.

  16. Scoop the potato mixture back into the potato skins.

  17. Carefully place the stuffed potato skins in the air fryer basket and close the air fryer.

  18. Set the timer to 8 minutes and press the “Start/Pause” button to initiate baking.

  19. Halfway through the cooking, open the air fryer and add the remaining cheddar cheese and bacon on top of potatoes.

  20. Continue baking until the timer runs out or until the cheese melts.

  21. Remove the twice baked potatoes from the air fryer and transfer them into a serving palate.

  22. Garnish them with chives.

  23. Serve warm.
