It is really important to choose the right kind of meat to make delicious fajitas. You can use regular steak fingers or some steak leftovers to make fajita but the most delicious one will be made using skirt steak.
Skirt steak is a great choice for making fajitas because it is very tender and soaks up the marinades perfectly. Sometimes flank steak can also be used but skirt steak is more traditional and more delicious than flank steak especially because of its ability to absorb the marinade.
Here is a quick and easy dinner for your family!
Ingredients
1 ½ pound skirt steak, thinly sliced against the grain
2 tablespoons fresh lime juice
¼ cup pineapple juice
1 tablespoon soy sauce
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon cumin powder
½ tablespoon chili powder
½ teaspoon smoked paprika
Salt and black pepper to taste
1 medium yellow onion, sliced
½ medium red bell pepper, deseeded and sliced
½ medium green bell pepper, deseeded and sliced
Olive oil spray
Directions
Put lime juice, pineapple juice, soy sauce, olive oil, garlic, cumin powder, chili powder, paprika, salt, and black pepper and mix them really well.
Add steak fingers to the mixture and blend them completely.
Cover the bowl with a plastic wrap or a lid and refrigerate it for 2 to 4 hours, preferably 4 hours.
Remove it from the refrigerator once the marinating time is up and leave it in room temperature for some 30 minutes.
Cut out a piece of foil to line the air fryer basket and set it aside.
Preheat the air fryer selecting the “Steak” function and adjusting the timer to 3 minutes. Once you press the “Start/Pause” button, it will begin warming up.
Once the preheating cycle is finished, open the air fryer and line the basket with foil you have already prepared.
Season the bell peppers and onion with salt and black pepper, spread them out into an even layer in the basket and mist them up with olive oil spray.
Close the air fryer and set the timer to 10 minutes and press the “Start/Pause” button to start cooking.
After 10 minutes, add marinated steak fingers onto the onion and bell peppers using tongs to avoid any burn and cook them for 6, 7 or 9 minutes according to your desired doneness by setting the timer again and pressing the "Start/Pause" button.
Open the air fryer once the cycle is finished and remove your skirt steak fajitas onto a serving platter.
Serve warm with tortillas and with your favorite fajita toppings.
Enjoy!
