Ingredients

  • Olive oil spray

  • 12 eggs

  • Salt and black pepper to taste

  • 1 cup chopped roasted red bell peppers (homemade or jarred)

  • 1/3 cup chopped fresh green onions

  • 3 tablespoons chopped fresh basil

  • 1 cup chopped baby spinach

  • ½ cup crumbled feta cheese

Directions

  1. Preheat the air fryer by setting the temperature to 350°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Lightly grease an 8-inch round rimmed baking tray with olive oil spray and set aside.

  3. Crack eggs into a bowl, add salt and black pepper, and whisk them well.

  4. Add bell peppers, green onions, basil, spinach, and half of feta cheese, and mix.

  5. Pour the egg mixture into the baking tray, and spread feta cheese on top.

  6. Open the air fryer, put the tray inside, and close it.

  7. Set the timer to 15 minutes and press the “Start/Pause” button to start baking.

  8. Cook until eggs are set at the center.

  9. Open the air fryer, remove the baking tray, and slide the frittata onto a serving platter.
