Air fryers have made making roasted chicken recipes so easy that you can try a different flavored one each time. This roast chicken recipe has a delicious marinade and your loved ones will eat it up in seconds at dinner. There is also the salsa verde recipe to accompany the chicken. You can complete your dinner menu with a rice or cracked wheat (bulgar) pilaf and green salad. Please keep in mind that this recipe requires a 6-hour marinating time. Hope you’ll enjoy it!

Ingredients

  • Chicken
  • 3 tablespoons olive oil

  • 2 limes, juiced

  • 1 tablespoon cumin powder

  • 4 garlic cloves, chopped

  • 2 tablespoons paprika

  • 1 tablespoon dried oregano

  • Salt and black pepper to taste

  • 2 tablespoons granulated sugar

  • 1 whole chicken (4 pounds), cleaned

  • Salsa verde
  • 1½ pound tomatillos, husk removed and roasted

  • ½ cup chopped white onion

  • 2 garlic cloves, minced

  • ½ cup fresh cilantro leaves

  • ½ lime, juiced

  • 2 serrano peppers, deseeded and chopped

  • Salt to taste

Directions

  1. Add olive oil, lime juice, cumin powder, garlic, paprika, oregano, salt, black pepper and sugar in a bowl and mix them very well.

  2. Place the chicken on a plate and rub the mixture all over it including its cavity.

  3. Cover the chicken with a plastic wrap and put it in the fridge for 6 hours to get marinated.

  4. After marinating the chicken, preheat the air fryer by selecting the "Chicken" function and adjusting the timer to 3 minutes. Once you press the "Start/Pause" button it will begin warming up.

  5. Insert the chicken fork of your air fryer into chicken through cavity and lock well. If your air fryer does not have rotisserie equipment then place the chicken on one of its trays or in the basket.

  6. Open the air fryer, insert the oil drip tray at the lowest rack and fix the fork with chicken in. If you do not have rotisserie in your air fryer, insert the tray or the basket in.

  7. Set the timer to 60 minutes. Press the "Start/Pause" button to begin roasting.

  8. The internal temperature of the chicken should reach 165°F and the outside should turn golden brown when it is cooked.

  9. Meanwhile you can prepare salsa verde. To do so, add tomatillos, onion, garlic, cilantro, lime juice, serrano pepper and salt into a food processor, pulse until it is smooth and salsa verde is ready.

  10. Once the chicken is cooked remove it from the air fryer and let it rest for 15 minutes at room temperature.

  11. Carve the chicken into desired pieces and spoon some salsa verde on top.

  12. Serve it warm.
