Key Lime Cupcakes Air Fryer Recipe

Key lime cupcakes are delicious refreshing white cakes. They are perfect when you need a light dessert. They accompany tea perfectly but they are a little too light to have with coffee. Coffee goes better with heavier tastes such as chocolate cake, carrot cake etc. Key lime is not so common in markets but if you have any chance to find them, then buy some and try this recipe. You’ll love it!

Ingredients

  • Cupcake batter:
  • Olive oil spray

  • 1 (15.5 ounces) box classic white cake mix

  • ½ cup key lime juice

  • Frosting:
  • ½ cup salted butter

  • 1 cup powdered sugar

  • 6 tablespoons fresh key lime juice

  • 2 teaspoons fresh key lime zest

  • 1 drop green food coloring

Directions

  1. Preheat the air fryer by setting the temperature to 320°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Line an 8-holed muffin pan with cupcake liners, mist the liners with olive oil spray, and set aside. If you do not have a muffin pan, you can place the muffin liners on any tray or in an air fryer basket directly.

  3. Add cake mix with required ingredients, and key lime juice in a bowl, and whisk well until smooth batter forms.

  4. Spoon the batter into the cupcake liners until it reaches two-thirds of the liner.

  5. Open the air fryer, put the muffin liners in, and close the air fryer.

  6. Set the timer to 20 minutes, and press the “Start/Pause” button to begin baking.

  7. Bake until cupcakes rise and an inserted toothpick to the center of a cupcake comes out clean.

  8. Make the frosting while cupcakes are baking. To do so, add all the ingredients into a bowl and whisk them until smooth.

  9. Spoon the frosting into a piping bag with a star nozzle.

  10. When cupcakes are ready, remove them from the air fryer and place them onto a wire rack to cool down.

  11. Once the cupcakes are cool enough, press the frosting onto them.

  12. Enjoy the key lime cupcakes!

    You can use regular lime in this recipe if you do not have key lime.If you do not have salted butter and will use unsalted one instead, add ½ teaspoon salt while making frosting. Salt is important to balance the sweetness.
