Blueberry and peach breakfast cake is one of the most popular cakes with its very refreshing and both moist and crumbly texture. It is so enjoyable to eat it that you cannot understand where it is all gone all of a sudden. Blueberry and peach cake is a great choice for breakfast because it is very nutritious and very energizing as well. This cake is also perfect to serve with tea and coffee when you have your friends over because it is so tasty and feels light after eating.

This popular cake is usually made in the conventional oven but you will enjoy making it in the air fryer in this recipe!

Ingredients

  • Olive oil spray

  • 1 ¾ cup + 2 tablespoons all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • ¼ teaspoon baking soda

  • ¼ cup unsalted butter (at room temperature)

  • 3 tablespoons vegetable oil

  • 2 large eggs, cracked

  • ¾ cup + 2 tablespoons granulated sugar

  • 1 teaspoon vanilla extract

  • 1/3 cup buttermilk

  • 1/3 cup sour cream

  • 1 ½ cups fresh blueberries

  • 2 peaches, stoned and sliced

  • 1 tablespoon turbinado sugar for garnish

Directions

  1. Preheat the air fryer by setting the temperature to 320°F and the timer to 3 minutes. Once you press the “Start/Pause” button, it will start warming up.

  2. Lightly grease a 10-inch round cake pan with olive oil spray and set aside.

  3. Add flour, baking powder, salt, and baking soda in a bowl and mix.

  4. Add butter, vegetable oil, eggs, white sugar, vanilla, buttermilk, and sour cream into another bowl and whisk them well.

  5. Combine both mixtures and whisk them until smooth batter forms.

  6. Fold in half of the blueberries and pour the cake batter into the greased cake pan.

  7. Level the top of the cake batter with a spatula and arrange peach slices on top.

  8. Open the air fryer, insert the cake pan, and close it.

  9. Adjust the timer to 25 minutes and press the “Start/Pause” button to start baking.

  10. Bake it until the cake sets. You can make a toothpick test to understand if it is sufficiently cooked by inserting a toothpick into the center of the cake. The toothpick should be clean when you pull it out if the cake is baked enough.

  11. Open the air fryer and remove the cake pan.

  12. Let it cool completely in the cake pan at room temperature.

  13. Run a butter knife around the edges of the cake and transfer it onto a serving platter.

  14. Garnish with turbinado sugar.

  15. Slice it and serve.

    HOW TO STORE BLUEBERRY & PEACH CAKE:

    It is recommended to consume blueberry and peach cake the same day you make it. It is already moist and it gets moister day by day. You can eat it the second day, too, but on the third day it will not taste as good.

    You should keep it in the refrigerator if you cannot finish it the same day you bake it. Freezing the leftovers is not preferable because it will not taste so good when you thaw it.
